Well, I told you. You can't say no. Do you remember, in last week's post, I told you it was pumpkin spam period? Forewarned is forearmed, friend!
Joking aside, pumpkin is such a versatile ingredient and I really can't help it but testing new recipes, both sweet and savory. It was the first time for me, face to face with a fudge. A pumpkin fudge. I really didn't know how it could possibly turn out. In short, it was super easy to "put together" and it was delicious. Just enough to eat two pieces while shooting these photos.

Healthy pumpkin fudge is what was missing in your fridge...
Yes. This is just what was missing. I know you're into healthy and quick snacks like me, so you'll fall in love with this recipe.
It literally takes 5 minutes to make ( + half an hour to set) and 4 ingredients only (plus a pinch of salt). You'll probably need more time to read this whole post that preparing them.
Coconut flour is essential here. It gives a nice flavor and texture. If you try with another kind of flour, you'll end up feeling it too "powdery" (is it a thing?!).

PUMPKIN FUDGE WITH ALMOND AND CHOCOLATE
Ingredients
- 150 gr Pumpkin purée
- 70 gr Almond butter
- a pinch Salt
- 25 gr Coconut flour
- 40 gr Dark chocolate
- Optional: sweetener of your choice
Instructions
- Line a 8 x 15 cm (approximately 3 x 6 inches) loaf pan with two pieces of parchment paper: one lengthwise, the other one horizontally.
- In a bowl, combine all the ingredients except for the dark chocolate. You can choose your sweetener, but feel free to omit it.
- The mixture shouldn't be too thick or too liquid. If it's too runny, add more coconut flour.
- Press it into the pan and let it set into the fridge for about 10 minutes.
- Meanwhile melt your chocolate, let it cool down a bit then pour it onto the fudge. To make it fancy: sprinkle some sea salt flakes on top.Let it set into the fridge until the chocolate is firm.
- Store in the fridge for a couple of days or in the freezer (it lasts longer).
