    Pumpkin spice latte recipe / healthy & easy

    Brown leaves falling down the trees, breeze becomes sharper, blankets comfort us and...a pumpkin spice latte brighten up our day! Am I right?
    Personally, a hot beverage when I'm working on my computer is everything I need. Also because my hands are always so cold 🥶

    P.S. this is not a brand new recipe. I shared this a few years ago - October 2016 - but I wanted to take photos properly so... here you are.

    Pumpkin spice latte recipe - the healthy version: steps

    If you're from the US, you all know this beverage. We in Italy though, are not very familiar with it.
    Starbucks only arrived here, to be more exact in Milan, in 2018.
    It's a reserve roastery (it's so cool!!!) and it doesn't serve all kinds of coffees and other drinks ('cause it's obviously adapted to the taste of the locals).
    The original PSL is made with: "milk, pumpkin spice sauce (made with 8 or more ingredients, like vegetable juices to give color and annatto, an additive), brewed espresso, whipped cream (cream and vanilla syrup), pumpkin spice topping". Not the best ingredients, but hey...you can enjoy it every once in a while.

    Anyway, during Fall, I always crave a good Pumpkin Spice Latte, so years ago I attempted to make this at home.
    Several times.
    Until I decided to "develop" my own recipe, which is actually very simple. Ridiculously simple (way more simple than the original one).

    It's only 3 steps:

    1. I pour pumpkin purée (I make it at home because we can't find cans here) and the spices into a pan. Stir.
    2. I add the milk, then the coffee and let simmer for a minute.
    3. Remove cloves and sweeten a little bit. DONE!

    What does pumpkin spice latte taste like?

    Lol you know how it tastes like. I'm not here to tell you.
    But this one is very delicate: the sweetness of the pumpkin perfectly matches the milk and coffee. I personally prefer soy milk, because milk + coffee together usually give me a bad stomach ache, but you're free to use your favorite.

    To keep it sugar-free (actually, added sugar free) I don't add any sweetener (I usually enjoy my espresso without sweetener). You'll see though that I listed it in the recipe card, to give you the choice.
    If you're used to the bitterness of coffee, you won't have problems with this healthy PSL flavor!

    What can I use to sweeten my PSL?

    As I mentioned, I personally enjoy it without sweeteners but you can try to use:

    • sugar
    • brown sugar
    • raw brown sugar/muscovado sugar/coconut sugar (tested)
    • honey
    • maple syrup (tested)
    • agave
    • stevia or similar (I don't like the flavour)

    HEALTHY PUMPKIN SPICE LATTE

    The healthier version of the famous Pumpkin Spice Latte! YOU decide if and how to sweeten it.

    Cook Time: 5 minutes
    Total Time: 7 minutes
    Servings: 1 person

    Ingredients

    • a tablespoon Pumpkin puree
    • Cinnamon powder - to taste
    • Nutmeg powder - to taste
    • 2 little Cloves
    • 1 teaspoon Vanilla extract (optional)
    • 200 gr Milk or soy milk
    • one shot Espresso coffee - (about 50 gr)
    • Muscovado sugar (optional)

    Instructions

    • In a small pot pour your pumpkin purée (I make mine at home) and the spices (and vanilla extract if you want). Stir then turn on the heat (medium-low).
    • Gradually add the milk to the pot, then the coffee.
    • When hot, let simmer for about a minute.
    • Remove the cloves and sweeten to taste (optional. I use muscovado or coconut sugar).
    • If you have a milk frother, froth your milk and top your PSL with it.
      DONE!
