    COCONUT BALLS WITH CHOCOLATE AND RASPBERRIES / HEALTHY SNACK

    One of the few things I remember from my marketing lessons at University is the acronym and motto K.I.S.S, Keep it simple, stupid (= most systems work best if they are kept simple rather than made complicated).
    Well, friend, these coconut balls with chocolate and raspberries respect the K.I.S.S. "rule": it's simple, quick (and healthy)!

    There’s a reason if they say that simple things are the best, right?

    Coconut balls, a simple healthy (for real) snack

    Well, it works the same with eating healthy. The less, the better.

    Think of what they say about food labels on packaged products: the shorter, the better.
    If something has a looong list of ingredients, well... better to avoid it.
    Most of the times, those extra ingredients are unnecessary.

    These no bake coconut balls with ricotta are literally one of the easiest snacks you can prepare (also amazing for kids!). It's made with 4 simple ingredients: ricotta, coconut, raspberries (fresh or frozen) and chocolate chunks.

    Why healthy?

    Well, their sweetness comes from raspberries and chocolate chunks. I added no sugar, at all.
    That's why it's really important to use a high quality ricotta. Because the flavor is all in the cheese itself.

    How to make ricotta coconut balls

    I've watched so many videos on how to make coconut balls, but they all contained so much sugar in it (condensed milk especially).
    Don't get me wrong, I don't hate sugar. But I always try not to eat it frequently.
    To make this recipe fully healthy, I felt it was not necessary at all.

    I will be honest, I’m so proud of this recipe. Never took me this very little time to make a utterly healthy snack. As I mentioned above, it's only made 4 INGREDIENTS. Craaaaazy!

    You will only need to:

    • Combine the ingredients
      Combine firm* fresh ricotta, sliced raspberries, coconut and chocolate chunks into a bowl.
    • Form coconut balls
      Take an ice cream scoop and form your balls: I usually take a spoonful of mixture, then divide it in two. Coat them with extra coconut.
    • Let rest
      Let them rest in the fridge for at least 30 minutes.
      Done!

    *A note about ricotta: if it's not firm (watch my stories highlights to see how firm mine was), let it drain for about 30 minutes into a sieve.

    How to store them

    Store them into a airtight container, into the fridge. NO room temperature!

    How much do they last?

    They last one or two days, maximum, into the fridge (if stored well).

    Can I freeze them?

    No. These are meant to be made and eat right away or the day after. They are so quick to make so it's almost pointless to freeze them.

    RICOTTA COCONUT BALLS

    Extremely easy 4-ingredient coconut balls with raspberries and chocolate: 2 minutes to make, no bake needed, no added sugars.

    Resting time: 30 minutes
    Total Time: 35 minutes
    Servings: 12 balls

    Ingredients

    • ½ cup Unsweetened shredded coconut (+ more for coating) - (40 gr)
    • 1 cup Fresh ricotta cheese (high quality!) - (200 gr)
    • ⅓ cup Raspberries or frozen raspberries - (40 gr)
    • ¼ cup Dark chocolate chunks - (20 gr) - Want them sweeter? Add more chocolate

    Instructions

    • Combine all the ingredients in a bowl.
    • Make balls-shaped bites and roll them in the coconut flakes.
    • Let them rest in the fridge for at least 30 minutes (the more, the better)
