I'm writing this post with the perfect background: the crackle of the light rain outside. Deeply relaxing and so hyggelig. Quite like last weekend.
Yup, what a weekend has been. Let me tell you what happened (something great, don't worry).
I’ve been with my boyfriend for almost six years, but our parents never actually met. You probably already know - if you've read my blog posts in the past - that we live in northern Italy, instead they live in the south (Sicily). I let you imagine why they never met.
On Saturday they finally had the chance to get to know each other better. Honestly, I felt like they've always been in the family. They talked a lot, we spent such a great time and they got along very well together. I’m so grateful for this and I hope you have the same luck, because the feeling of having not one but TWO families is priceless.
They have the most amazing ricotta...
My in-laws are so lucky by the way, because they still live in Sicily and they can eat certain food all year long. Sometimes I wish I lived there just to have a life time supply of fresh ricotta . They have REAL ricotta there, believe me. Forget the one you find at the grocery store. That is nothing compared to it.
If you've visited this beautiful island you already know all this. If you haven't, well go book a flight now! I've already 'convinced' a couple of people to visit Sicily and try its amazing food.
Everything is better if made with sicilian ricotta. How many did I say 'ricotta'? Well, ricotta.
These healthy chocolate truffles, a great snack...
Remember my 4 ingredients coconut balls? Well, ricotta balls are one of my favorite healthy snack ever. It takes a couple of minute to make - literally. You only need to combine ingredients and form the balls - and they're made with basic ingredients.
They're super healthy, refined sugar free (just high quality chocolate), low carb and perfect for your kids too.
You'll see that by mixing ricotta, cocoa powder and shredded coconut you'll obtain a delicious mousse. Make your balls-shaped bites, roll them in cocoa or pistachios...and you're done! Easy, uh?

HEALTHY CHOCOLATE TRUFFLES
Ingredients
- 100 gr Fresh ricotta
- 10 gr Shredded coconut
- 5/10 gr Cocoa powder (unsweetened) - + extra to coat
- 10 + 10 gr Pistachios - (roughly ground)
- 1 tablespoon Date syrup - (or other syrup)
- 10 gr Dark chocolate
Instructions
- In a bowl, combine ricotta, coconut, cocoa powder, date syrup and 10 gr of ground pistachios. Stir with a spoon.
- With wet hands, start forming little balls (I've used a melon baller). Then roll them onto
- Roll each ball in cocoa powder, pistachios or dark chocolate.
- Place them on a plate to refrigerate.
