If you have been following me for a while, you probably know that I shared this recipe a couple of years ago already. And you probably know that I am re-shooting my old recipes to make my website cohesive and good-looking. Since my photography, I can proudly say, really improved in this last period, I want to take time and shoot all the oldest recipes!
A few days ago, one girl that follows me on Instagram, wrote me a private message telling me that she was looking for a quick breakfast and thought about me (what an honor!!!). So she decided to make my easy microwave granola and SHE LOVED IT!
Therefore I decided to refined it, make a better version, and today I am here sharing with you my QUICK 'n' EASY granola with hazelnuts and chocolate!
Easy microwave granola? Is it possible to make granola in 5 minutes?
Ever happened to you that you wake up and you don't feel like doing anything (I just wanna lay in my beeeed 🎶 - Bruno Mars rules)? It happened to me. Things are better since I follow a Morning Routine though (by the way, I absolutely want to update you about that!)
Also, never happened that you crave something healthy but still super yummy? Obviously.
And I bet you wish it materialized in front of you! Of course!
Well, this is what happened with this recipe. I woke up - two years ago, remember this is an old recipe? - and I was really craving... granola. I did not have the time to bake it in the oven, though (and I actually didn't want to turn it on because it was so hot).
Then I had an idea: making it using the microwave!
I've investigated on the Internet and I've obviously found recipes (ehy food bloggers, you know that we can't invent recipes anymore right?). I've tested it and made my own version. Result? AMAZING.
Now, a couple of years later, here I am with the new - and lot better - version. It's not like the oven-baked one, but you can trust me: it's the perfect competitor!
In this version I've added hazelnuts, cocoa nibs and dark chocolate, but since it's very versatile you can add pretty much whatever you want: pistachios, peanuts, other nuts, seeds, dehydrated fruit...
Also a wonderful dessert
You know what I loved most about this? To take this pic (below) I had to pour some milk into the bowl. I ended up with a bowl full of milk and granola but it was 12.30 pm and I couldn't eat this for lunch.
Then my brain told me 'Well, it's oats and milk right? Just like oatmeal!'. I took a jar, poured everything in, put the jar in the fridge and guessed what I ate as dessert after dinner? The most amazing "overnight" (not actually overnight) oatmeal! TRUST ME: I'm not exaggerating, I don't know why but it was extremely scrumptious.
Ingredients
- 4 tablespoons Oat flakes
- 20 gr Coconut oil (from the fridge)
- 2 tablespoons Water
- 10 gr Hazelnuts
- 10 gr Cocoa nibs
- 10 gr Chocolate chips or chunks
Instructions
- Put your oats into the bowl (microwave safe), add coconut oil (still solid, not liquid), the water, then stir a bit.
- Cook into the microwave on high, for 1 minute. Take it out, stir and add all the flavors (I've used hazelnuts, cocoa nibs and chocolate chips)
- Cook on high, for another minute.
- Take it out, stir and cook for one minute again.You'll just need 3 minutes or so.
- Let it cool down to make it crunchier!
