GREEK YOGURT POPSICLES WITH GRILLED APRICOTS AND STRAWBERRIES / NO REFINED SUGAR

A super healthy snack: how to make these yogurt popsicles

If you’re like me and you like snacking between your meals, you NEED this. Why? Well, snacking can trick us 🙈 sometimes we eat food that it’s simply “too much” to just keep hunger at bay.

Therefore, I’m always looking for a light, healthy and nutritious alternative.
Which satisfies me but doesn’t fill me completely.

These Greek yogurt popsicles with apricots and strawberries are just perfect for that reason.

They’re only made with 4 ingredients (5 if you include vanilla extract) and they’re as simple as delicious. You only have to:

  • Grill your apricots halves (grilling gives an extra touch);
  • Defrost strawberries with honey until it becomes a sort of jam;
  • Blend yogurt, vanilla, honey and apricots;
  • Layer the apricot mixture and strawberry “jam”;
  • Freeze

Done. Easy-peasy.

Which yogurt should I use? Can I avoid grilling apricots?

When I say these yogurt popsicles are healthy and light, I mean it.
Take a look at the nutrition facts: they only have 70 calories each (I’m not a fan of counting calories though), with 2 gr of fats, 9 gr of carbohydrates (sugars), 4 gr of protein.

Yogurt

In this case I’ve used plain full fat Greek yogurt, but you can use non-fat one or regular yogurt.
You can also try flavored yogurt but they’re usually high in sugars already.

Fruit

This recipe calls for apricots (which I grilled) and strawberries, but you can use other fruit.
For example, try to swap apricots for peaches (grilled peaches are AMAZING) or strawberries for raspberries (whatever is in season).

IMPORTANT: in this recipe, if you want some really good popsicles you NEED quality fruit. Unripe is a big NO.

Sweetener

I’ve used honey to avoid loading my popsicles with too many sugars.
You can try agave or maple syrup.
If you’re going to use raw brown sugar, the color will probably change (but that shouldn’t be a problem).

Which mold should I use to make yogurt popsicles?

Any popsicle mold is ok. If it’s smaller, your popsicles will be more than 7 (duh)
If you are obsessed with pretty things like I am, you can buy mine on Amazon (HERE).
Mine was the blue-white one, but the colorful one is cheaper right now.

I like this mold but sometimes the popsicles are not that easy to pull out. I recommend taking them out of the freezer about 15-20 minutes before serving. Alternatively, place them under warm running water for just a few minutes.

Can you freeze yogurt and eat it like ice cream?

I think this recipe is the proof.
BUT if you don’t add a certain amount of sweetener, it may become rock-hard.
In this recipe, I’ve added honey, plus we have the natural sugars from the fruit. That’s why these yogurt are not that hard.

They’re actually pretty easy to eat;)

APRICOT STRAWBERRY GREEK YOGURT POPSICLES

Super healthy snack (perfect for kids) made with Greek yogurt, grilled apricots, strawberries and honey. Simple and quick.

Equipment

  • Popsicle mold – linked in post

Ingredients

  • 5 Apricots
  • 1 cup Diced strawberries (I've used frozen) - 150 gr
  • 3 tablespoons Honey
  • 10.6 oz Plain Greek yogurt (you can try with regular yogurt too) - 300 gr
  • 1 teaspoon Vanilla extract

Instructions

  • Slice your apricots in halves.
  • Heat a grill pan and grill each apricot half. Grilling is optional, it will give extra flavor (a bit caramelized).
  • In the meantime, use a small pan to defrost strawberries (at low heat). Then add 1 tablespoon of honey and cook until syrupy (they should look like a jam).
  • Using a food processor, blend together yogurt and apricots (I set aside a couple just to chop them), with 2 tablespoons of honey and approximately one teaspoon of vanilla extract.
  • Pour the apricot mixture into the popsicle molds, alternating with strawberry "jam" (and apricot chunks if you set aside those).
  • Freeze.
    Keep in the freezer until ready to serve.
