Pico de gallo & guacamole

Two classics of Mexican cuisine: pico de gallo & guacamole, my version!

Ingredients

To make Pico de gallo:

  • 2 Tomato
  • 4 Green onion
  • a handful Parsley or cilantro
  • The juice of one lime
  • Salt
  • a piece Chili pepper (to make my version) or jalapeño pepper

To make guacamole:

  • 1 Ripe avocado (not over-ripe)
  • 2 tablespoons Lime juice
  • 2 Green onion
  • Salt
  • a pinch Garlic powder

Instructions

To make Pico de gallo:

  • Chop all the veggies and put them into a bowl.
  • Sprinkle some parsley and drizzle the juice of one lime on top.
  • Give it a stir and let it sit for at least 10 minutes to make the flavors know each other.

To make guacamole:

  • Cut the avocado in half lengthwise and scoop it into a bowl. Smash it but keep it slightly chunky.
  • Finely chop 2 green onions and add it to the smashed avocado.
  • Add salt, garlic powder to taste and lime juice.
  • Serve with homemade corn tortilla chips.
