And yeah, the photo portrayed <a href=\"https:\/\/www.instagram.com\/accounts\/login\/?next=\/p\/BxummrfIxN4\/\" class=\"broken_link\">a beautiful plate full of gnocchi<\/a>, <strong>vegan gnocchi<\/strong> to be precise.<br>How can a dish be this simple, yet this yummy and comforting? <\/p>\n\n\n\n<p>Let's learn a bit more about this hearty pillowy \"pasta\"!<\/p>\n\n\n\n<div class=\"wp-block-button aligncenter has-custom-font-size has-small-font-size\"><a class=\"wp-block-button__link has-very-dark-gray-color has-very-light-gray-background-color has-text-color has-background wp-element-button\" href=\"#vegangnocchi\">Jump to recipe<\/a><\/div>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"vegan-gnocchi-isn-t-the-egg-necessary\"><span style=\"text-decoration: underline;\">Vegan<\/span> gnocchi? Isn't the egg necessary?<\/h2>\n\n\n\n<p>I've been making gnocchi since I was a little girl, sometimes with my mom and sometimes with my <em>nonna<\/em> (grandma).<br>And I've always seen them using the same process: boil the potatoes, peel, mash, add eggs and flour, knead to form a dough, roll into ropes, cut the pieces, cook. That's it. <\/p>\n\n\n\n<p>Oh man, it would be awesome to let my grandma taste some of these vegan gnocchi. I wonder what she'd say knowing they don\u2019t contain eggs at all.<br>She would probably ask me how the heck I've managed to make a nice \"potato dough\" without something that adds structure and keep the ingredients together. <\/p>\n\n\n\n<p><strong>Seems like making gnocchi without eggs is impossible, right?<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1500\" height=\"2250\" src=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2019\/05\/How-to-make-vegan-gnocchi-1.jpg\" alt=\"A plate full of vegan gnocchi with tomato sauce\" class=\"wp-image-8279\" srcset=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2019\/05\/How-to-make-vegan-gnocchi-1.jpg 1500w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2019\/05\/How-to-make-vegan-gnocchi-1-200x300.jpg 200w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2019\/05\/How-to-make-vegan-gnocchi-1-768x1152.jpg 768w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2019\/05\/How-to-make-vegan-gnocchi-1-683x1024.jpg 683w\" sizes=\"auto, (max-width: 1500px) 100vw, 1500px\" \/><figcaption class=\"wp-element-caption\">Did you know that gnocchi are naturally vegan?<\/figcaption><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"quite-the-opposite\"><strong>Quite the opposite<\/strong>...<\/h3>\n\n\n\n<p>If you work with the right potatoes and you adopt all the gimmicks, you can actually skip the eggs, because you won't need a \"glue\" to keep everything together.<\/p>\n\n\n\n<p>Therefore, the most important thing to remember is: <strong>treat potatoes<\/strong> - the key ingredient -<strong> properly.<\/strong><br>Let's see together what I mean...<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"tips-for-making-the-best-gnocchi\">Tips for making the best gnocchi:<\/h2>\n\n\n\n<p>In order to make our gnocchi taste DELICIOUS and potatoey - <em>is that a word?! <\/em>-  you need to remember some \"rules\":<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Choose the right potatoes<\/strong>: the older the better, so they're starchier and do not contain too much water.<br>In the US I think the best are Russet, here in Italy the best to make gnocchi are the red skin ones.<br>Either way, the key is the starchiness.<\/li>\n\n\n\n<li><strong>Do not peal them before cooking<\/strong>, otherwise they'll absorb water and lose some of their flavor.<\/li>\n\n\n\n<li>Choose potatoes<strong> similar in size<\/strong>, so they cook evenly.<\/li>\n\n\n\n<li>Even better: <strong>steam<\/strong> them instead of boiling them, so they won't absorb the cooking water.<\/li>\n\n\n\n<li>If possible, <strong>peel and mash them immediately.<\/strong> Then let them cool down a few minutes.<\/li>\n\n\n\n<li><strong>DO NOT use any food processor<\/strong> to mash them: I don't have a potato ricer and I use a fork. A bit more time-consuming, but not really. I actually find it harder to use a ricer <em>lol<\/em><br>If you use a food processor, you\u2019ll obtain a sticky, gluey mixture. A big no-no.<\/li>\n\n\n\n<li>The <strong>flour<\/strong>: add it <strong>gradually<\/strong>, so you can adjust it.<\/li>\n\n\n\n<li>Treat it like a pie crust: <strong>knead<\/strong> the dough <strong>quickly<\/strong> so it doesn\u2019t become damp, and as little as possible so it doesn\u2019t develop gluten (that would make gnocchi tough).<\/li>\n\n\n\n<li>\"Decorate\" with <strong>ridges<\/strong>: it's not just a decoration actually, they help \"holding\" the sauce!<\/li>\n\n\n\n<li>While the first batch is boiling, keep the others onto a floured surface so they don't stick. Remove the excess flour before throwing them into the water.<\/li>\n<\/ul>\n\n\n\n<p>Finally, <strong>remember: too much water means you have to add more flour. What should their consistency be?<\/strong> <p class=\"schema-faq-answer\">They should taste like...POTATOES! <br\/>Seems stupid, right? Well, some people out there still get this easy recipe wrong.<br\/>Gnocchi should be pillowy and tender, not too tough, dense or chewy.<br\/>It seems an easy recipe (and it is), but make sure to follow the \"rules\".<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1559029498578\"><strong class=\"schema-faq-question\">What is Italian gnocchi made of?<\/strong> <p class=\"schema-faq-answer\">Easy: potatoes and flour. Some people (my mom and nonna, for example) also use eggs and salt.<br\/>In my opinion, the less ingredients the better.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1559029486573\"><strong class=\"schema-faq-question\">What type of potatoes are best for making gnocchi?<\/strong> <p class=\"schema-faq-answer\">The old ones, with a starchy pulp.<br\/>In the US, you should have Russet or Yukon Gold that work fine.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1559029590644\"><strong class=\"schema-faq-question\">What type of flour is used for making gnocchi?<\/strong> <p class=\"schema-faq-answer\">In Italy we use 00 flour (doppio zero), which is finely milled. <em>\"It leads to a smoother, more supple, malleable dough...\"<\/em> <a href=\"https:\/\/www.latimes.com\/food\/la-fo-master-class-20111103-htmlstory.html\">like this post says.<\/a><br\/>On other blogs you'll find all kinds of flour, also gluten free. I say...test them!<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1559029062856\"><strong class=\"schema-faq-question\">Do you need a ricer to make gnocchi?<\/strong> <p class=\"schema-faq-answer\">As I mentioned in the previous paragraph, I don't use a ricer (simply because I don't have one), but if you have it then use it. Or use a fork, whatever you prefer.<br\/>NEVER use a food processor, otherwise you'll get a gluey dough.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1559146397943\"><strong class=\"schema-faq-question\">Can you freeze gnocchi? Can you refrigerate them?<\/strong> <p class=\"schema-faq-answer\">Yes and yes.<br\/>Freeze them before cooking. When you want to eat them, cook them as if they were freshly made.<br\/>Regarding refrigeration: my mom sometimes makes a few extra plates, she cooks them, let them cool down and then refrigerate them. The day after (max 2 days later) she stir fries them with a tiny bit of oil! Delicious!<\/p> <\/div> <\/div>\n\n\n\n<p>So, to sum up, find some high quality potatoes and start making these vegan gnocchi every week!<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img
