And if I say <em><strong>easy<\/strong><\/em>, you can trust me, IT IS. I'm not an expert on soups and ramen\/noodles soups, in fact I've always hated soups. To be precise, I've always hated <em>minestrone <\/em>soups and chicken broth.<strong>But this one is different.<\/strong>&nbsp;This one has a <strong>flavorful veggie broth<\/strong> (oh gosh, I wish I could sip it right now!) and a <strong>delicious tasty tofu<\/strong> (I've never thought I would say that). This one made me love soups (at least <em>this<\/em>!)<br>And YOU will probably end up loving soups as well, if you try it!<\/p>\n\n\n\n<p>P.S. isn't it perfect for these cold Winter days? I'm thinking about you American friends: I mean, - 40\u00b0 C?! This soup is not extremely quick (the good news, though, is that <strong>you can prepare it in advance),<\/strong>&nbsp;but it's definitely <strong>easy<\/strong>. You'll see it has quite a few ingredients, but don't be scared: they <strong>can be found easily<\/strong>.<br>Less Sodium Soy Sauce, Barley Miso and Udon noodles can be found in ethnic stores or organic grocery stores (if you're lucky also at the supermarket). If you can't find them, order them online!<\/p>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p><strong>If you don't find udon noodles at your grocery\u00a0store, check out<\/strong> <strong><a href=\"https:\/\/www.amazon.com\/Clearspring-Organic-Japanese-Udon-Noodles\/dp\/B0170B9034\/ref=as_li_ss_tl?ie=UTF8&amp;qid=1549034265&amp;sr=8-3&amp;keywords=udon+noodle&amp;linkCode=ll1&amp;tag=healthylc02-20&amp;linkId=5a71dbc465903b096da2f1708541124c&amp;language=en_US\" rel=\"nofollow\">these<\/a><\/strong><\/p>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">The essential:<\/h5>\n\n\n\n<p>When I decided to make a noodle soup for lunch a couple of weeks ago, before actually making it, I searched for a few hours on the Internet and read so so many recipes.<br>You can find millions of noodles soup recipes out there, but the majority of them is made with chicken (or other meat) broth. Chicken broth probably does all the job because it gives so much flavor and it's packed with benefits. But, as mentioned above, I don't like it, and if I eat chicken is just because \"I have to\" (we have a complicated relationship). So, I opted for a veggie broth.<br>You only need water, a bit of salt, carrot, celery and onion and you'll have a simple and delicious \"base\" for your soups. To spice it up though, you'll also need <strong>Barley Miso,<\/strong> which in this case <strong>gives all the flavor. <\/strong>This is the essential ingredient, otherwise you will fail like me the first time I tried it: I barely salted my broth, and added just a tiny bit of miso. It was flavorless! The flavor is a combination of sweet, savory and spicy! Delicious!<\/p>\n\n\n\n<p>Regarding the rest of the soup: you could (and should!) have fun and experiment with different combinations. Try adding boiled eggs, &nbsp;for example, or other kinds of vegetables.<\/p>\n\n\n\n<p>Lastly, I'd like to make a criticism (to myself): I don't feel like calling it <em><strong>ramen<\/strong><\/em>, that would be an insult to the real ramen, which is made of meat broth and a combination of flavors\/toppings. This is \"just\" a vegan miso soup with noodles, and it's \"just\" my version, but I promise it's goooood.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to make an amazing noodle soup<\/h2>\n\n\n\n<p>I know what you're thinking:<em> You said you're not an expert, so why are YOU telling US how to make a noodle soup?<br><\/em>Well, I've tested it and failed and now I want to share the main tip to make the perfect soup: <strong>the broth<\/strong>. As my online friend Chiara (<em>@<a href=\"https:\/\/www.mangioquindisono.it\">mangioquindisono<\/a><\/em>) told me once, the broth is the key. If you want an amazing soup, then you need a<strong> superb broth<\/strong> (which is quite obvious, in hindsight).<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"720\" height=\"1080\" src=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2019\/02\/vegan-noodles-soup-3.jpg\" alt=\"Easy and quick vegan ramen recipe.
