Perfect dish fo Christmas!<\/em><\/p>\n<hr \/>\n<p>Want to know what my days look like these days? Ginger, lemon, paracetamol (a couple of pills only), ginger, lemon, hot tea, ginger, lemon, fresh-squeezed orange juice. Yup, as soon as the temperatures dropped, I caught a cold. So each morning now starts with a <strong>ginger shot<\/strong> (recipe by <a href=\"https:\/\/www.instagram.com\/alphafoodie\/\"><em><strong>@alphafoodie<\/strong><\/em><\/a>, you can find it on her story highlights) and a ton of <em>kleenex<\/em>.<br \/>\nBut this does not prevent me from testing recipes in these last few days: look at this savory mushrooms leek soup, isn't it perfect? Up to you!<\/p><\/div>\n<p>A note: its' not a quick recipe. This is the second quiche I share here on the blog, and like I mentioned last time <a href=\"https:\/\/healthylittlecravings.com\/en\/spinach-ricotta-quiche\/\"><strong>(here)<\/strong><\/a>\u00a0you first have to blind bake the crust and then bake the filling. If you want to avoid butter, try <b><a href=\"https:\/\/healthylittlecravings.com\/en\/2018\/09\/12\/spinach-ricotta-quiche\/\" target=\"_blank\">this one<\/a><\/b>.&nbsp;<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Both crusts need blind baking, meaning you have to cook your crust first and then crust + filling. I blind baked my crust for about 15\/20 minutes at 180\u00b0C, then lowered the temperature at 160\u00b0C to cook the filling.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">I've used a 27 cm (10 inches) pan, but it was 3 cm deep <b><a href=\"https:\/\/amzn.to\/2UF3cme\" target=\"_blank\">(similar to this one)<\/a><\/b>. Rachel used a 21 cm pan, 5 cm deep.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h5 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">To make the filling:<\/h5><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-6414-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Into a bowl, add 3 eggs and whisk slightly, then add ricotta, milk, salt and pepper.
