Especially into a bowl that can also warm up your hands while you hold it.<\/p>\n\n\n\n<p>For this soup I wanted the mushroom flavor to dominate and I wanted to keep it light but still creamy.<br>How?<\/p>\n\n\n\n<p>Instead of using heavy cream (which - to clarify - I'm not against to!), I've used a combination of plain milk + a bit of flour.<br>Et voil\u00e0, the magic happened. CREAMINESS level 1000.<\/p>\n\n\n\n<p>So next time you want to make your favorite cream of *something* soup, remember about this combo.<\/p>\n\n\n\n<p>Oh, this is probably the best soup I've made so far. The brown butter is ready when it has a beautiful golden brown color. Transfer it to a dutch oven.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong><span style=\"text-decoration: underline;\">Onion + potato<\/span><\/strong><\/h3>\n\n\n\n<p>Time to mince the onion and grate the potato. You can also cut the potato into cubes, but grating it allowed me to shorten the cooking. <br>Add them to the pan (medium heat), stir and let cook for 2-3 minutes making sure they don't stick.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong><span style=\"text-decoration: underline;\">Deglaze<\/span><\/strong><\/h3>\n\n\n\n<p>Oh did they stick? No problem!!! Time to deglaze.<br>Deglazing seems a fancy word but it's something really simple: just add liquid (marsala in this case - you can also try with white wine or other dry wine) into the hot pan and scrape the caramelized bits stuck on the bottom of the pan.<\/p>\n\n\n\n<p>Those \"bits\" are a treasure, full of flavor!&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong><span style=\"text-decoration: underline;\">Add mushrooms + cook<\/span><\/strong><\/h3>\n\n\n\n<p>Time to add your favorite mushrooms (chopped), then cook for about 5 minutes stirring every once in a while.<\/p>\n\n\n\n<p>To give more creaminess I add all purpose flour to the mushroom mixture. To add more aroma I add oregano and fresh thyme. A teaspoon salt to enhance all the flavors. Simple.<\/p>\n\n\n\n<p>Then pour both broth and milk, and stir. Bring to a boil (medium-high heat) then reduce to low heat. Your goal now is a gentle simmer (for 15-20 minutes until creamy).<\/p>\n\n\n\n<p>Finally, use an immersion blender to blend the cream of mushrooms soup and serve warm\/hot.<br>I served mine with goat cheese, thyme leaves and a sprinkle of black pepper (for extra flavor use parmesan cheese - I personally don't like it).<\/p>\n\n\n\n<p>(Recipe is for 2 people so we ate half of the soup each, but you can also serve this to 3 people).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1800\" src=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4.jpg\" alt=\"\" class=\"wp-image-17570\" srcset=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4.jpg 1200w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-200x300.jpg 200w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-683x1024.jpg 683w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-768x1152.jpg 768w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-1024x1536.jpg 1024w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-720x1080.jpg 720w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-360x540.jpg 360w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-180x270.jpg 180w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2021\/09\/cream-of-mushrooms-soup-4-150x225.jpg 150w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Broth, mushrooms, marsala, herbs: possible variations<\/h2>\n\n\n\n<p>Let's talk about substitutions for this cream of mushroom soup recipe. There are a few ingredients here that cannot be omitted, just like mushrooms (duh), others are optional or you can substitute them.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Butter<\/span><\/strong>: you can skip making brown butter, or you can use oil. To me brown butter gives the nutty touch that a mushrooms soup needs.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Marsala wine<\/span><\/strong>: just omit it or use another dry wine.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Mushrooms<\/span><\/strong>: I've used 3 types of mushrooms because that is what I had - cremini mushrooms, portobello mushrooms and King trumpet - but you can absolutely use one kind only...your favorite!<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Flour<\/span><\/strong>: I've used 00 flour (all purpose), but you can also use cornstarch. The flour here will increase the creaminess.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Herbs<\/span><\/strong>: I read the books that I own to see which herbs are best with the earthy flavor of mushrooms, and it looks like thyme and oregano are ideal. <\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Broth<\/span><\/strong>: I've used homemade unsalted shiitake mushrooms broth but you can also use vegetable broth (or chicken stock). I would recommend not using the salted one because the soup will reduce so the concentration of salt will increase.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Milk<\/span><\/strong>: I think milk is essential for a creamy soup so I wouldn't omit it, instead you can soy milk for a vegan version, or heavy cream (but I usually want to keep it lighter so I use plain milk).<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><span style=\"text-decoration: underline;\">Goat cheese<\/span><\/strong>: I topped my mushrooms soup with goat cheese to give an extra herbaceous taste, but you can skip it or use a tablespoon or so of creme fraiche \/ sour cream.<\/li><\/ul>\n\n\n\n<p>You can make a vegan mushroom soup by omitting goat cheese and replacing butter with oil\/vegan butter, milk with soy milk.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to store it<\/h2>\n\n\n\n<p>I usually prepare this for dinner and enjoy hot.
