So I created a box full of <span style=\"text-decoration: underline;\">different<\/span> cookies, made with <span style=\"text-decoration: underline;\">ONE dough<\/span> only. Stress free!!!<br>See the photo below? Soft but chewy. <strong>Every bite is a BURST of FLAVOR!<\/strong><br>As I mentioned at the beginning, my boyfriend tends to keep away from anything mint flavoured. He hates the feeling of eating something that tastes like toothpaste.<br>I made these thinking about him (hey, I wanted to create a balanced cookie!). And HE.LOVED.THEM!<br>On a scale from 1 to 10, how much happiness do you think I felt?<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1800\" src=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2.jpg\" alt=\"\" class=\"wp-image-15916\" srcset=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2.jpg 1200w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2-200x300.jpg 200w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2-683x1024.jpg 683w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2-768x1152.jpg 768w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2-1024x1536.jpg 1024w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2-720x1080.jpg 720w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2-360x540.jpg 360w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/12\/double-chocolate-peppermint-cookies-2-180x270.jpg 180w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">How to make this cookie dough &amp; what makes these cookies chewy - part 2, <span style=\"text-decoration: underline;\">SUGAR<\/span>.<\/h2>\n\n\n\n<p>As I mentioned in my last post, there are THOUSANDS of cookie dough recipes out there.<br>They are all very similar, only the ingredients' ratio varies.<br>So mine is nothing new.<\/p>\n\n\n\n<p>But I tested this dough different times to get the perfect chewy cookie.<br>Despite that, you will necessarily have <strong><span style=\"text-decoration: underline;\">to adjust it, based on the ingredients that you'll use<\/span><\/strong> (a different brand of flour, for example, could absorb more liquids). <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">To make my cookie dough: <\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>First make your brown butter (find the instructions in the recipe card)<\/strong><\/li>\n\n\n\n<li><strong>Combine butter and sugars<\/strong><br>Last time we talked about how butter impacts on the chewiness of the cookie. Well, sugars too. A lot.<br>To get the most out of a cookie you have to use a <span style=\"text-decoration: underline;\">combination<\/span> of white sugar and dark brown sugar. If you use only white sugar, the cookie will be a bit...plain, and flat (it spreads a lot).<br>Dark brown sugar instead has a higher % of molasses in it, which makes the cookie <span style=\"text-decoration: underline;\">moist and chewy.<\/span><\/li>\n\n\n\n<li><strong>Add egg, peppermint and vanilla<\/strong> <strong>and let incorporate<\/strong><\/li>\n\n\n\n<li><strong>Now add dry ingredients + chocolate<\/strong> <strong>+ peppermint<\/strong> <strong>candy canes<\/strong><\/li>\n\n\n\n<li><strong>Let chill<\/strong> <strong>for 30 minutes<\/strong><\/li>\n\n\n\n<li><strong>Form cookies and bake<br><\/strong>This cookie dough spreads, but less than my coffee caramel cookies. They're definitely not cheap, but it's worth it, especially  if you want to gift them to someone for Christmas.<\/p>\n\n\n\n<p><strong>Little<\/strong> <strong>ADVICE<\/strong> <strong>I also gave you last time<\/strong>: in order to avoid wasting them, test a small batch of my cookie dough recipe (divide it into 2 or 3, yes also the egg) <span style=\"text-decoration: underline;\">without<\/span> them. Then make it again using these chips. I don't want you to waste money!<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong><span style=\"text-decoration: underline;\">SUBSTITUTIONS:<\/span><\/strong><\/p>\n\n\n\n<p>If you don't want to use Valrhona, simply find another brand. DON&#039;T overbake, we want chewy cookies right?;)<\/span><\/div><\/li><li id=\"wprm-recipe-15929-step-2-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">A few minutes after taking them out of the oven, place a chocolate chip on top of the cookie. <a href=\"https:\/\/healthylittlecravings.com\/en\/2020\/12\/02\/chewy-caramel-coffee-cookies\/#coffeecookies\"><u>As mentioned in the other recipe<\/u><\/a>, these chips are heavy and for this recipe I&#039;ve used a total of 125 gr (which is about 1 cup).<\/span><\/div><\/li><li id=\"wprm-recipe-15929-step-2-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\"><strong>If your cookies are not round once baked:<\/strong> while they are still warm use a round food ring to make them &quot;rotate&quot; and smooth out the edges. (this is a tip I&#039;ve learned from Mike @<a href=\"https:\/\/www.instagram.com\/mikebakesnyc\/\"><em>mikebakesnyc<\/em><\/a>)<\/span><\/div><\/li><\/ul><\/div><\/div>\n\t<div
