It had SUCH a delicate flavour. And just consider I've never been a huge fan of pears.<br>So, I decided to ask mom her \"old\" pear pie recipe, but then made a little change (and came out so good!). It's amazing how food can do that, isn't it? I hope this dessert will enter your heart too and never leave!<\/p>\n\n\n\n<p>As I mentioned above, this pie reminds me of my mom.<br>She used to make it with pie crust (<strong><span style=\"text-decoration: underline;\"><a href=\"https:\/\/healthylittlecravings.com\/en\/how-to-make-strawberry-pie\/\">this<\/a><\/span><\/strong> is her recipe) and just pears and a bit of sugar as a filling.<\/p>\n\n\n\n<p>Everything was so balanced that the pie had such a delicate flavor. I don't know how to describe it better. Not too sweet, just perfect.<\/p>\n\n\n\n<p>But I wanted to make a change. <strong><em>What about bourbon whiskey?<\/em><\/strong> I thought.<br>Never had a better idea. Of course I haven't invented it, but at least I had a good idea <em>lol<\/em><\/p>\n\n\n\n<p>Bourbon - with its <strong>\"roasted\" aroma<\/strong> - and pome fruits (pears, apples and quinces) - with that <strong>floral flavor<\/strong> - are known to go well together.<br>(Found these information on my \"book of the moment\", <strong><span style=\"text-decoration: underline;\"><a rel=\"nofollow\" href=\"https:\/\/amzn.to\/3kPpayG\">The Flavor Matrix<\/a><\/span><\/strong>)<\/p>\n\n\n\n<p>I've only used 2 tablespoons of bourbon, and trust me, they were enough to taste it but not in a \"aggressive\" way.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">How to make this pear pie<\/h3>\n\n\n\n<p>Anyway, making this pear pie is simple and quick (except if you want to take time to make the decoration with dough pearls. That takes a bit more time):<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Make the pie crust<br><\/strong>Use my recipe below to make the crust: I swear it's fail-proof!<br>It's very similar to my strawberry pie recipe. I've only used a bit less sugar.<br><\/li>\n\n\n\n<li><strong>Make the filling<br><\/strong>Takes 5 minutes to peel and cut your pears, then add bourbon and the other ingredients and set aside.<br><\/li>\n\n\n\n<li><strong>Assemble<\/strong><br>Roll out half of your dough, fill with the pears then cover either with dough pearls or lattice.<br>To make pearls: take tiny pieces of dough and roll it with your hands quickly. In case they soften too much, put them back into the fridge until they have the right consistency.<br><\/li>\n\n\n\n<li><strong>Bake!<\/strong><\/li>\n<\/ul>\n\n\n\n<p>See? Easy.<br> The only time-consuming activity is making dough pearls. They are also called <strong>Bosc<\/strong> pears.<br>If you live in the US, you can probably find <strong>Bartlett<\/strong> and <strong>Anjou<\/strong> too!<\/p>\n\n\n\n<p>Mom recommends to use ripe pears that are not mushy!;)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">I don't like bourbon whiskey, can I omit it?<\/h2>\n\n\n\n<p>This pear pie recipe was originally created WITHOUT bourbon, as mentioned above.<br>So, feel free to omit it. <\/p>\n\n\n\n<p>I can guarantee though that the bourbon here adds that something that makes the pie extra special. Just like the ones in photo. <\/p>\n\n\n\n<p>Although this decoration makes it nice and unique, you don't <span style=\"text-decoration: underline;\">have to<\/span> do it. <br>You can opt for a simple one like pie lattice (I've linked a <a href=\"https:\/\/www.youtube.com\/watch?v=hivHnWre28Q\" rel=\"nofollow\">video<\/a> from Sally's Baking Addiction in the recipe card). Stir gently and set aside.<\/span><\/div><\/li><li id=\"wprm-recipe-15611-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Preheat the oven at 180\u00b0 C (350\u00b0 F).<\/span><\/div><\/li><li id=\"wprm-recipe-15611-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Take the dough out of the fridge, divide the pastry in two pieces.<\/span><\/div><\/li><li id=\"wprm-recipe-15611-step-2-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place one of the two pieces on a parchment paper sheet, then roll with a rolling pin.<\/span><\/div><\/li><li id=\"wprm-recipe-15611-step-2-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Transfer the pastry to a 24 cm (approx 9 inches) pie pan. Place it into the fridge again, while you make the little pearls (or lattice).<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h5 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">For the decoration:<\/h5><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-15611-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">You can make dough pearls like I did (this was mom&#039;s original recipe) or a simple pie lattice <a href=\"https:\/\/www.youtube.com\/watch?v=hivHnWre28Q\"><u><strong>(click here to see how)<\/strong><\/u><\/a><\/span><\/div><\/li><li id=\"wprm-recipe-15611-step-3-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">If making pearls: take tiny pieces of dough (different sizes) and roll into individual pearls with your hands. lattice.<\/span><\/div><\/li><li id=\"wprm-recipe-15611-step-3-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Optional: brush with egg wash and sprinkle some sugar (my mom doesn&#039;t).<\/span><\/div><\/li><li id=\"wprm-recipe-15611-step-3-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Bake for 35\/40 minutes
