Don't get me wrong: I LOVE IT. But I wanted to create something <strong>different<\/strong>. <\/p>\n\n\n\n<p>I had some almonds to use up. I ground them. Added some other stuff. Et voil\u00e0. It's 100% possible to make an oat-free granola recipe (which also happens to be vegan). <strong>So, let's see the ingredients<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>1. Almonds<\/strong><\/h3>\n\n\n\n<p>This is our \"base\". You can either grind (roughly) your almonds or use store-bought almond meal. I've tested both. I noticed store-bought almond meal absorbed more and became a bit too wet, so I recommend grinding your own almonds.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>2. Nut butter<\/strong><\/h3>\n\n\n\n<p>I've tested this granola with pecan butter, almond butter and peanut butter. I loved them all!<\/p>\n\n\n\n<p>I find this recipe is perfect to use up some nut butter you're not consuming (like in my case: my almond butter was too thick and I couldn't spread it. It was amazing in this recipe though.)<\/p>\n\n\n\n<div class=\"mv-video-target mv-video-id-wbqt6v5ptmn5q2cnn6pf\" data-video-id=\"wbqt6v5ptmn5q2cnn6pf\"   data-volume=\"20\"  data-ratio=\"4:3\" ><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>3. Aquafaba<\/strong> (from unsalted chickpeas)<\/h3>\n\n\n\n<p>Key ingredient. Aquafaba is not something I use that often, but it's necessary because it kinda acts like a \"binder\". If you're not vegan, use egg white.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>4. Maple syrup<\/strong><\/h3>\n\n\n\n<p>Maple syrup, agave...use whatever you prefer to sweeten this homemade gluten free granola. If you're not vegan, you can also use honey.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Best granola mix-ins<\/strong><\/h2>\n\n\n\n<p>In this case, I've added cocoa nibs and chocolate chips, for a chocolatey option but still healthy (cocoa nibs contain benefits!). You can add them at the beginning or after the granola cooled down.<\/p>\n\n\n\n<p>Possibilities are endless, you can add:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Seeds<\/strong> (any kind!), add these at the beginning.<\/li>\n\n\n\n<li>Whole <strong>unsalted<\/strong> <strong>nuts<\/strong>, like hazelnuts, pecans, cashew... add these at the beginning too. They're going to be toasted in the oven.<\/li>\n\n\n\n<li><strong>Dried fruit <\/strong>(dates, apricots, apples, banana, cranberries, blueberries...), add these at the end to prevent burning.<\/li>\n\n\n\n<li><strong>Coconut<\/strong>, add it at the beginning, to toast it with the granola.<\/li>\n<\/ul>\n\n\n\n<p>You choose!<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1800\" src=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1.jpg\" alt=\"\" class=\"wp-image-14834\" srcset=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1.jpg 1200w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1-200x300.jpg 200w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1-683x1024.jpg 683w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1-768x1152.jpg 768w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1-1024x1536.jpg 1024w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1-720x1080.jpg 720w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1-360x540.jpg 360w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2018\/12\/grain-free-granola-1-180x270.jpg 180w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">How to make granola without oats<\/h2>\n\n\n\n<p>Making this granola is extremely simple and you'll only need ONE bowl. <\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>First pre-heat the oven at 150\u00b0 C - 302\u00b0 F<\/li>\n\n\n\n<li>Combine all the ingredients (except the mix-ins) into a bowl and stir with a fork\/spoon. My advice: also \"work\" them with your hands, like you're making crumble.<\/li>\n\n\n\n<li>Add cocoa nibs and chocolate chips. Stir.<\/li>\n\n\n\n<li>Spread the mixture (crumbles) on a baking sheet lined with parchment paper, then bake for about 35 minutes. Stir every 10 minutes or so. Baking time depends on how moist the granola is. <\/li>\n\n\n\n<li>Let cool down so it sets and become crunchy, and enjoy.<\/li>\n<\/ol>\n\n\n\n<p><strong>Want big granola chunks?<\/strong> Do not crumble. Instead spread the mixture into a single layer, on your baking tray, then bake. But remember they're not the same thing (<em>duh<\/em>).<\/p>\n\n\n\n<p>Oats are mainly carbs. Almonds are mainly fats. OR with some good yogurt (lately I've been enjoying goat yogurt!).<\/p>\n\n\n\n<p><strong>TIP (<span style=\"text-decoration: underline;\">not<\/span> for those who only like crunchy granola):<\/strong> I take photos during the day so I usually put my granola into a jar of yogurt, mix, refrigerate until the morning after.  The yogurt \"soaks\" the granola and its flavors. I love it!<\/p>\n\n\n\n<p>Another tip: I usually plan to make this when I know I will eat chickpeas for lunch\/dinner. bake for about 35 minutes.
