And I mean, <span style=\"text-decoration: underline;\">REALLY<\/span> appreciated. So, when I share it, I love to describe how amazing it is.<\/p>\n\n\n\n<p>Sometimes though there are not enough words and you just have to <strong><span style=\"text-decoration: underline;\">try<\/span><\/strong> the recipe. Same with this fluffy Japanese milk buns recipe: I can't even describe the flavor, it's too good. But, I'll try.<\/p>\n\n\n\n<p>When I made these for the first time, more than a year ago, I simply used my <strong><a href=\"https:\/\/healthylittlecravings.com\/en\/soft-hokkaido-milk-bread-recipe\/\">Hokkaido milk bread recipe<\/a><\/strong> and added chocolate chips. Then last week I tried to <strong>increase the quantity of powdered milk<\/strong>.<\/p>\n\n\n\n<p><strong>The flavor changed, for the better.<\/strong> Adding more milk obviously translated in a <strong>more milky sweet flavor<\/strong>. And OMG, what can I say? Again, you just have to try it. This is what make the milk buns super fluffy. <\/li>\n\n\n\n<li><strong>Bread flour<\/strong>. <\/li>\n\n\n\n<li><strong>Brown sugar<\/strong>. Feel free to use white sugar instead.<\/li>\n\n\n\n<li><strong>Dry yeast.<\/strong> I always use instant, so you don't need to activate it.<\/li>\n\n\n\n<li><strong>Milk and milk powder<\/strong>. Milk powder enhance the milky flavor.<\/li>\n\n\n\n<li><strong>Egg and high quality butter. <\/strong>For a richer milk bread dough.<\/li>\n\n\n\n<li><strong>Chocolate chips<\/strong>. Milk or dark chocolate, both ok. You can also omit them, but they give a nice sweet touch to the buns. <\/li>\n<\/ul>\n\n\n\n<p>These are all ingredients that are easy to have access to, so you have no excuses!:)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to make milk buns - key steps<\/h2>\n\n\n\n<p>Making milk buns with chocolate chips is not difficult, even though there are some steps in which you have to be \"careful\". But after all it's an easy recipe. So let's see (the steps seem a lot, but the process is like any other yeast leavened baked good)<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Step 1: Make A Water Roux (Tangzhong Method)<\/strong><\/h3>\n\n\n\n<p>First, you have to make water roux by combining water (or whole milk) and flour into a small saucepan, then let it thicken at low heat and let cool down at room temperature.<\/p>\n\n\n\n<p>In my <a href=\"https:\/\/healthylittlecravings.com\/en\/soft-hokkaido-milk-bread-recipe\/\">Hokkaido milk bread's post, in the FAQs paragraph<\/a>, you can read WHY water roux gives softness to our bread (it's called Tangzhong method) Let cool down.<\/p>\n\n\n\n<div class=\"mv-video-target mv-video-id-gogr4tmiyfr4lbcusevo\" data-video-id=\"gogr4tmiyfr4lbcusevo\" data-volume=\"70\" data-ratio=\"16:9\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Step 2: Prepare Milk Bun Dough<\/h3>\n\n\n\n<p>Add dry ingredients: bread flour, fine sea salt, sugar into the bowl of a stand mixer (into bread machine - with \"dough\" setting), then activate (I use the dough hook attachment).<\/p>\n\n\n\n<p>Now add warm milk + active dry yeast, half of the beaten egg, milk powder (you can also add this before - you can use condensed milk too), water roux and let knead. Unsalted butter (softened, not melted) is added <span style=\"text-decoration: underline;\">at the end<\/span> because <strong>fat can inhibit gluten formation<\/strong>. Let knead until gluten forms.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Step 3: Check If Gluten Has Developed (Windowpane Test)<\/strong><\/h3>\n\n\n\n<p>Take the windowpane test to check if gluten network is formed.<br>You just have to take a small piece of dough, then gently stretch it with your fingers. Again, pay attention when forming the soft milk chocolate bun: be gentle and <span style=\"text-decoration: underline;\">work quickly<\/span> (or chocolate will melt). Place them on a baking tray covered with parchment paper.<\/p>\n\n\n\n<p>Let rise again until doubled, covered with plastic wrap, lid or damp towel. Brush the buns with egg wash and bake in preheated oven. How can you understand if it's the right time to stop kneading?<\/p>\n\n\n\n<p>If you UNDER-knead, the dough will look loose and it will tear because <strong>gluten \"structure\" hasn't formed yet<\/strong>.<\/p>\n\n\n\n<p>If you OVER-knead, your dough will be <strong>tough<\/strong> and will tear, this time because <strong>gluten network is too tight.<\/strong><\/p>\n\n\n\n<p><strong>To check gluten development, <a href=\"https:\/\/www.pinterest.it\/pin\/208080445253123620\/\">perform the windowpane test<\/a><\/strong>: take a piece of dough, gently stretch it with your fingers. You can freeze them and thaw\/warm them up when you want. That's what I always do.
