(French) onion soup. <em>Duh<\/em><br>The problem was, in that moment, I didn't want to make bone broth or buy it, and I also wanted to make it really <strong>simple<\/strong> (suitable for all), but <strong>mouthwatering<\/strong>.<br>So, are you ready to dive into this<strong><em> <\/em>easy <span style=\"text-decoration: underline;\">vegetarian<\/span> French onion soup? <\/strong>(my version)<\/p>\n\n\n\n<p>If you're craving some comforting <em>hygge<\/em> food this is definitely what you should eat!<br>And I promise, it's not difficult at all! I know you're craving this comfort food, this vegetarian French onion soup, and you want an easier version, so here are my substitutions:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Vegetable stock<\/strong><br>As I mentioned above, instead of using beef stock I've used a veggie one. This makes it a vegetarian French onion soup! Easy peasy.<br>Some people also use mushrooms broth.<br><\/li><li><strong>Caramelized onions<\/strong><br>Ahem, there's no substitute here obviously. BUT, instead of caramelizing your onions for 40-45 minutes, you can decrease time and make this in 20-25 minutes.<br>Of course the slower the better, but I guarantee: it's delicious anyway.<br><\/li><li><strong>Balsamic vinegar or wine<\/strong><br>I don't have alcohol at home. If you keep stirring, they won't brown.<br>Of course, watch them closely or they will burn!<br>I keep my heat to medium high, then I lower it if needed.<br>My favorite recipe for caramelized onions is <strong><a href=\"https:\/\/youtu.be\/kEfJTmf9hDs?t=30\">this<\/a><\/strong> (even though it takes more time).<\/li><\/ol>\n\n\n\n<p>Look at their beautiful brown color.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"800\" src=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/01\/Copia-di-process-shot-collage-5.jpg\" alt=\"\" class=\"wp-image-11244\" srcset=\"https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/01\/Copia-di-process-shot-collage-5.jpg 1000w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/01\/Copia-di-process-shot-collage-5-300x240.jpg 300w, https:\/\/healthylittlecravings.com\/wp-content\/uploads\/2020\/01\/Copia-di-process-shot-collage-5-768x614.jpg 768w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/figure>\n\n\n\n<ol class=\"wp-block-list\" start=\"3\"><li><strong>Deglaze<\/strong><br>When onions are ready, add balsamic vinegar or other liquid (I've tested Marsala wine and it's so good!) to deglaze.<br>[Deglazing means to add a liquid to the pot to stir those bits off the bottom and enhance the flavor of the dish.]<br><\/li><li><strong>Add stock, let simmer<\/strong> <br>At this point, add your vegetable stock (possibly homemade, check out <strong><a href=\"https:\/\/healthylittlecravings.com\/en\/vegan-noodles-soup-miso-easy\/\">here<\/a><\/strong> how), salt, pepper, bay leaf and sage leaves\/thyme (optional). Lower the heat and simmer for 20 minutes.<br><\/li><li><strong>Broil<\/strong><br>Pour soup into a cocotte and add one or two slices of baguette &#x1f956; and two slices of cheese. video)<\/strong><\/a><strong>.<\/strong><\/span><\/div><\/li><li id=\"wprm-recipe-11152-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In a pot, let butter and oil melt (pay attention not to burn them). <\/span><\/div><\/li><li id=\"wprm-recipe-11152-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add onion slices and give a stir. Keep at medium heat.<\/span><\/div><\/li><li id=\"wprm-recipe-11152-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">IMPORTANT: in order to make them caramelize, you<u> <\/u><u><strong>don&#x27;t have<\/strong><\/u> to keep stirring! You just have to let them brown on the bottom then stir, let brown and stir and so on.<\/span><\/div><\/li><li id=\"wprm-recipe-11152-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Caramelization takes about 25 minutes.
