So, since one day, about a month ago, I wanted to make burgers and I was craving a nutritious burger bun, I came up with the recipe of these homemade whole wheat hamburger buns. I swear, best dinner ever!

In a few months, I will move to my boyfriend’s house, here – I say here because I’m at his place in this exact moment – in the famous Food Valley, the area of good eating. In case you didn’t know, the Food Valley it’s a large area located in Northern Italy, that expands between Parma, Reggio Emilia & Modena [Emilia Romagna]. This region is the home of a large number of food companies. Food is often presided over by Slowfood association. Think about Parmigiano Reggiano, pasta (Barilla), preserved food…
Especially relevant is Parma, the main hub of the food valley. And guess what, I’m gonna move here. So stimulating for a food blogger, isn’t it?
Me and my boyfriend are two food enthusiasts and I absolutely love making him try new things. Her mom – my mother-in-law – says I always make him a lot of ‘manicaretti’, which I don’t know exactly how to translate but the concept is ‘delicious food’. In fact, she’s right!
So, when I made him these burger buns he-went-craaaazy!
Made with high quality flour…
It was actually my mother and father in law to give us some organic homemade (by an aunt) whole wheat flour when we visited them back in December. From that moment I kept making and baking food with this amazing ingredient. Useless to say it’s a tooootally different thing and taste right? So much more nutritious and healthy!
So, go buy some high quality flour, prepare your ingredients, fly to your kitchen and make these homemade whole wheat hamburger buns!
Homemade Whole-Wheat Hamburger Buns
Easy, delicious and healthy homemade burger buns.
Make these after lunch and they will be ready for dinner!
For the homemade burger buns:
- 300 gr Whole wheat flour
- 200 gr Bread flour
- 1 Egg
- 210 gr Water at room temperature
- 50 gr Milk + some extra to brush the buns
- 2 tablespoons Brown sugar
- 20 gr Extra virgin olive oil
- 8 gr Salt
- 7 gr Dry yeast
- Sesame seeds to top the burger buns
For the chickpea burgers (for 8 small burgers or 4 bigger ones):
- 220 gr Cooked chickpeas or black chickpeas
- 2 small Boiled potatoes
- 4 teaspoons Mustard
- 1 Shallot
- 3 tablespoons Flaxseeds
- 6 tablespoons Water
- a splash Soy sauce
For the homemade burger buns:
Put your flour in a bowl and add the dry yeast. Quickly stir.
Add all the ingredients, except for the salt, and start combining.
After a couple of stirs, add salt and keep kneading until you get a nice and soft dough.
Cover and let it rise - in a warm place/at 30°C - until it doubles its size.
Gently take the dough out of the bowl and divide it into 8 pieces. Shape each piece into a round ball.
Place the buns - well separated - on a baking tray lined with a parchment sheet, cover, and let rise for an hour.
Preheat the oven at 190°C. Brush your burger buns with warm milk, paying attention to not deflate them. Top with sesame seeds.
Cook for 20/30 minutes or until golden brown.
For the chickpea burgers:
Make your egg substitute by combining 4 tablespoons of water and 3 of flaxseeds. Let it rest 5/10 minutes.
Mix all the ingredients: chickpeas, boiled potato, mustard, egg substitute, shallot.
Add soy sauce and adjust to taste.
Heat up a non-stick pan, grease with a drop of oil and cook until golden brown.
