Super simple pancakes and with just two ingredients… Whaaat? Yes, two ingredients pancakes. Gluten-free, dairy-free and without added sugar or fats.
These are the quickest and simplest pancakes. As you may imagine, it wasn’t me who invented them.
These pancakes are very nutritious, as they consist of two eggs and one banana, and fit, thanks to proteins and low fats quantity (just those given by the eggs).
Ingredients: (for eight pancakes roughly, it depends on the dimension)
- One banana
- Two eggs
How to prepare:
Pre-heat a non-stick pan. In the meantime, slightly whisk eggs in a bowl. Smash the banana and then add the beaten eggs.
At this point, if you want to make things difficult, you can add also other ingredients: a few coconut or almond flour, chocolate chips, frozen fruit, chopped hazelnuts… either, you can opt to use some of these ingredients to garnish.
I chose the second and ate my two ingredient pancakes with frozen berries.
Allow your pancakes to cook both sides. You can flip them when you can lift them entirely with a spatula. If you don’t have a good pan, grease it with a drop of oil. The pancakes should have a nice gold brown colour.
I will definitely have to try fill them with my homemade Nutella! What better occasion than this? You could also eat them with the traditional Canadian maple syrup (I always buy this) or with peanut butter.
I convinced my boyfriend to make these pancakes as an alternative to the usual breakfast and they were super APPROVED! The comment was: a tasty banana dream!
This breakfast is very quick to prepare. That’s my philosophy by now. Besides, I have my own daily tasks and every morning I have to rush to work, so I usually choose to make my breakfast the night before. If I make it in the morning, it must be quick to prepare, as I have just the time to eat and take pictures for you! 😉
