Double chocolate pancakes with peanut butter came into my mind by chance. You know I am crazy about this combination. Once I even made peanut and chocolate butter cups (the peanut butter cups!); they are highly calorie but sometimes we can give ourselves a treat! And they are not harmful for your health, I promise!
These pancakes aren’t harmful either; on the contrary, peanut butter contains healthy fats. But, as I always say, they are still fats. So, be careful to balance out your daily macros.
- Egg whites, two (approximately 60 gr)
- Unsweetened cacao, 1 and ½ teaspoon
- Flour, to your choice (I used oat flour), 1 tablespoon
- A pinch of salt
For the garnishment:
- Dark chocolate, a little cube (7 gr around)
- Peanut butter, 1 teaspoon
How to prepare:
To make these pancakes I got inspired from my basic version of my protein pancakes with egg whites. That time I called it basic version simply because you can draw inspiration from it and customize it as you wish. In this case, for example, I added cacao and decreased the quantity of flour.
In a bowl, beat egg whites (if you have packs like these, use 60 gr roughly) with a pinch of salt. At this point, add the flour you chose and gently mix in being careful not to deflate egg whites. Bring together also the sifted cacao to avoid any lump. Then, stir well.
In the meanwhile, heat a saucepan. Use a drop of oil if you know it will stick (everyone knows their own pans, right? I know I can “trust” just some of mines!). Pour some batter in the saucepan and make it cook until bubbles start popping up and the bottom doesn’t stay stuck to the pan. Flip the pancake and cook the other side.
When you finish cooking all the pancakes, place a little cube of dark chocolate at the top of your pancake layer so that it will melt, then add the peanut butter.
Your double chocolate pancakes are ready!
