I am here, once again with a pancake recipe, this time it’s chocolate pancakes with jam (apricot jam), so? This means Sacher torte pancakes! You can’t say that in the last weeks this cake is getting into my head, can you? 😉
Well, I remind you my recently made porridge… that was also special!
These chocolate pancakes with jam are amazing and incredibly tasty! The combination of chocolate and apricot jam is simply perfect, just like in Sachertorte!
Ingredients: (for two big chocolate pancakes with jam)
- Egg whites, 150 gr
- Cacao, a tablespoon approximately
- Plain or flavoured oat flour, 30 gr
- Almond milk, 10 ml
- Baking soda, a hint
For the coating:
- Dark chocolate, a little cube (10 gr roughly)
For the filling:
- Apricot jam , as needed (better if handmade or with a low quantity of sugar)
How to prepare:
I found it very simple to make these chocolate and jam pancakes. Why? Because they are big pancakes! This means you don’t need to spend time to make every little pancake. You just need to pour half the batter into the saucepan, cook it and then finish with the other one.
First, mix all the dried ingredients: the flour you chose, the baking soda (1/4 of a teaspoon roughly) and the cacao. Beat egg whites until stiff. You might notice the high quantity of these. I used the pack with pasteurized egg whites. If you can’t find it, the equivalent is more or less five egg whites. But I am aware that then it might be difficult to deal with five yolks. So, as these are high quantities, you can halve them and eat only one pancake. As I always remind you, this depends also on your daily regime.
Bring together the dried ingredients and the egg whites, and then add milk.
In the meanwhile, preheat a medium size non-sticky saucepan. As I always say, if your saucepan is not a high-quality one, grease it with a drop of oil. Pour half batter into the saucepan and allow it to cook until bubbles start plopping on the surface. Flip it and cook the other side. Do the same for the other pancake. While the last one is cooking, spread some jam on the first pancake. When the second pancake is cooked, pile it up and put a little cube of dark chocolate at the top to coat all upper surface. The dark chocolate will melt as you move it through the pancake.
